Mini Pepper and Cucumber Bites
Prep time: 20 minutes
Ingredients:
8 mini sweet peppers
1 cucumber
4 ounces low-fat cream cheese, softened
1/3 cup plain, nonfat Greek yogurt
2 tablespoons everything bagel seasoning, divided
Directions:
- Wash hands with warm water and soap, scrubbing for at least 20 seconds.
- Wash mini peppers and cucumber under cool running water, using a vegetable brush to scrub the surface.
- Cut the mini peppers and cucumbers in half and scoop out any seeds.
- In a small bowl, mix the softened cream cheese, Greek yogurt, and 1/2 tablespoon of everything bagel seasoning.
- Spread the cheese mixture into the peppers and cucumber, sprinkle with the remaining everything bagel seasoning and cut into bite-size pieces. Serve and enjoy.
- Refrigerate leftovers within 2 hours.
